It’ s since the Bronze Age that olive groves have been cultivated on the Garda Lake’s Morainic Hills.
The slopes surrounding the Garda Lake are the northern place in the world where this holy tree can grow.
Solimago’s olive grove, spreads out in the sunny Bark valley and is made up of plants cultivar Leccino and Casaliva, witch is autochthonous of this area.
Leccino’s variety (that we propose pickle-cured too) has deep spicy notes; on the other hand Casaliva’s variety develops a clean bitter note.
Every year we pick olives by hands in the middle of November and within a few hours we bring it to the oil press where they are immediately cold pressed under the heavy weight of two Baveno’s granite grindstones.
We produce an Extra Virgin Olive Oil stunning for his golden colour, wrapping senses with all summer’s breezes fragrance. It tastes softly and is delicately fruity with floral notes and a green grass and ripe almond’s aftertaste.
The Solimago’s Extra Virgin Olive Oil has to be used raw to fully taste his mild lightness and the complex bouquet.
Solimago’s production is selected and limited.
We propose our oil in two different sizes: 50 cl and 75 cl. |
